Here we have a Broccoli recipe to

Mashed Broccoli with Leeks Recipe

Feeds: 4    Preparation Time: 15 minutes    Cooking Time: 20 minutes
This dish is creamy and satisfying and can be used to replace mashed potatoes on your dinner plate.

Ingredients

1 ½ pounds broccoli; cut into 1-inch chunks, including stems
1 ½ cups vegetable or chicken broth
1 large leek, roughly chopped
1/4 cup plain yogurt or light sour cream
2 cloves garlic, smashed
Salt and pepper

Recipe Instructions

Cook.
Combine the broccoli, leek, garlic and chicken stock in a large pot. Bring the mixture to the boil and cover. Allow to simmer on a low heat for 20 minutes until the broccoli is tender.

Blend.
Remove from the stove and transfer the mixture into a serving dish. Puree with a blender until smooth.

Serve.
Stir in the low fat yogurt and season to taste.
